About this course
In this course you will learn the fundamentals of vinegar-based pickling.
Cornersmith co-owner Alex will share her three favourite pickling recipes: Bread and Butter Cucumber Pickles, Pickled Baby Beetroots and Sweet Pickled Pears to explain the process and foundations of pickling.
You will learn everything from how to select the best produce to the importance of the type of vinegar and salt you use. Alex will also cover food safety and equipment requirements so you can fill up your pantry for the seasons ahead.
Meet your teacher
Alex Elliott-Howery is a cook, author and co-owner of Cornersmith cafes and Cooking School in Sydney, Australia. Dubbed the “Godmother of Preserving”, Alex has established herself as the authority on preserving, a pioneer in the war on food waste and a trusted source for the future of food.
Alex is a self taught preserver and tried just about every preserving recipe out there. This has given her a wealth of knowledge to teach you the foundations of Pickling.
